Phase 3 - Jelly
Jelly is the third layer of the Production Pit, where the formal fermentation process is carried out with the help of lactic acid bacteria, yeast, filamentous fungi, and the enzyme chymosin. This location is similar to a thermal “theater,” where the microbial “actors” collaborate to create a colorful performance, changing milk into various and unique jelly blocks.
